TAFE Gippsland apprentice chef Jessica Fraser-Smith has been named the winner of the 2026 Les Toques Blanches Award of Excellence, taking home the competition's only Gold Medal and a $5,000 culinary scholarship.

The prestigious Victorian competition brings together some of the state's most talented emerging chefs, challenging them to showcase their skills, creativity and technical knowledge under pressure.

Jessica, a second-year apprentice studying at TAFE Gippsland, stood out among a highly competitive field, impressing judges with her performance across a series of practical and theoretical challenges.

Competitors were required to prepare a three-course menu within three hours, featuring an entrée using Humpty Doo Barramundi, a main course incorporating M J Poultry and a mystery box of ingredients, and a dessert of their own design. They also completed a theory and ingredient identification test.

The scholarship will provide Jessica with the opportunity to further develop her skills and explore culinary opportunities both in Australia and overseas.

TAFE Gippsland Hospitality Program Manager Vince Fede said the award was a reflection of Jessica's dedication, work ethic and passion for the industry.

"Jessica's achievement is exceptional. To be named the overall winner and the only Gold Medal recipient speaks volumes about her talent and commitment to excellence," he said.

"She has consistently embraced every opportunity to learn, challenge herself and refine her skills. We are incredibly proud of what she has achieved and look forward to seeing where her culinary career takes her."

Jessica's success adds to a growing list of achievements for TAFE Gippsland hospitality students and apprentices, highlighting the strength of the training and industry partnerships that help prepare learners for successful careers in hospitality.

Thanks to the Les Toques Blanches committee, judges, sponsors and volunteers for delivering an event that supports and celebrates the next generation of culinary talent.

Special recognition was also given to hospitality teacher Kellie Smith for her ongoing support and commitment to helping students achieve outstanding results.
